Online classes cover cleaning, canning, kimchi and a bit of calisthenics

Sarah Lewis, a health, home and family development agent with the university’s Cooperative Extension Service, said she has a “whole menu of classes” to choose from every year, and is offering half a dozen online courses the next two months in foods, cleaning and exercise.

Lewis, based in Juneau, said each agent in the University of Alaska Fairbanks program chooses which classes to offer based in large part on what people say they are interested in taking.

“These classes tend to be my most popular,” she said of this year’s offerings.

The classes will be by Zoom from 5:30 to 7 p.m. Mondays, Feb. 2, 9, 16 and 23, and March 9 and 16.

Feb. 2: The science behind cleaning and how to make simple, effective cleaners using inexpensive ingredients.

Feb. 9: How to turn wild, store-bought or garden vegetables into small batches of pickles to store in the refrigerator.

Feb. 16: Making probiotic foods, such as sauerkraut, kimchi and fermented vegetables, using lacto-fermentation with salt.

Lewis said she will send out an ingredients list before the Feb. 2, 9 and 16 food-preparation classes, if participants want to work along with her on Zoom.

Feb. 23: Simple exercises to help people get their muscles and bones ready for the summer months.

March 9: Water-bath canning for people of all experience levels, with a focus on frozen berries and fruits, including creative canning recipes.

March 16: “Participants can clear last year’s frozen meat and fish from their freezers and learn to safely and efficiently process it in jars, using a pressure canner,” said Lewis, who has been teaching food and health classes for 13 years.

Each class costs $12 and is open to anyone; there is no class size limit.
